- pastry puff dough( I used the 16 square ones 5 inch x 5 inch)
- 2 eggs
- cooking spray
For the Feeling:
- 0.5 Lb feta cheese or bulgarian cheese
- 0.5 lb ricotta cheese
- a bundle of green onion chopped
- a bundle of fresh dill chopped
- 1 egg yolk
- 1 tsp salt
Take one square of the dough on the side and place 1 Tbs of feeling in one corner. Fold the dough squares by grasping one corner and folding it over to the opposite corner to make triangles. Pinch firmly along the outer open edge of the triangles to seal(I used a fork). Repeat the same with the second sheet.
Spray the baking sheets with cooking spray or line with parchment paper. Place 8 pastries on each sheet, giving the some room to expand during baking.
In a small bowl, whisk the eggs and 2 tsp of cool water. Use a pastry brush to brush a light layer of the egg wash on top of each pastry.
Bake for about 30-35 min until done. Serve warm.
